Special Visitors, Part 2

Justin put her right to sleep

Jer’s parents and brother came to visit during the first week of April. We had a great time, and Aspen loved being held by whoever wanted her next! I was hoping we could get outside more, but the weather didn’t cooperate. Most days still had a very wintery feel. I enjoyed being able to make meals with both hands, and then Cindy usually cleaned up while I was feeding Aspen. It was like magic, I always walked into a clean kitchen! Justin helped me move (or rather, Justin moved) Aspen’s crib into her room. She seems to be doing well, and we are all sleeping a bit better.

Food.

For the past while I have been eliminating some of the most commonly allergenic foods from my diet to see if we can help Aspen’s eczema and itching. I have been trying to avoid milk for several months now, but for the last 2-4 weeks have also cut out nuts, eggs, soy, gluten, and Red #40. Aside from a few minor setbacks in which I found out that it is not just lactose I should be avoiding, but the protein casien, also, we are doing quite well. I have found that many, many things contain these ingredients! And that they are sometimes listed under different names. I think we finally are seeing some progress with Aspen’s skin clearing up, so that makes it all worth it.

Anyway, I have been trying to cook and bake with different flours, and it is actually quite fun. The first pizza was with a gluten-free Bisquick mix, and it was good, but the crust was a bit more like a cracker. Tonight I made my own dough, and it was delicious!! I also found out that pesto has both milk and nuts, so I might have to learn how to make my own. My sister got me a great baking book for my birthday that teaches you how to bake without gluten, wheat, dairy, eggs, soy, peanuts, tree nuts, and sesame! I made the cinnamon rolls as soon as the book came in the mail. And proceeded to eat most of them before I went to bed that night. Jer helped, but I admit I had several more than he did.
